Don’t like the idea of green beans?? Try these and you’ll be going back for seconds 😉
If you’re looking to cook some greens over this weekend, here’s an idea…
I made these yesterday and just loved how they turned out, I was so surprised at how fast they cooked and how juicy and tasty they turned out in the end!
This is a winner in terms of, texture, favor, color & taste 🙂 Very easy to make as well
Cook Time: 15 mins Prep Time: 10 mins
Ingredients:
- 250 grams of fresh green beans
- 2 tablespoons of grated/ shredded fresh/ frozen coconut
- 1 teaspoon of cumin seeds
- half a teaspoon of turmeric
- half a teaspoon of red chili powder
- half a teaspoon of mustard seeds
- salt to taste
- 1 sprig of curry leaves
- 2 tablespoons of cooking oil (I’ve used sesame seed oil! love the flavor, it’s very nutty)
- dash of water – to avoid burning
Directions:
Start by washing and chopping the green beans to about a half an inch or so
Then in a heavy base wok/ pan on medium heat, add the oil, once hot add in the cumin, mustard and curry leaves (be careful as the curry leaves release their moisture and this makes the hot oil splatter so ensure you put lid on immediately or stand away from it!!)
To this add the beans, sprinkle some salt & a dash of water then cook with lid on for 10 mins on low heat, you will notice the beans slightly change color, become a lighter shade of green then its time to stir in turmeric & red chili powder.
Season with remaining salt if required. Cook for another 2 mins with lid on.
Lastly, add the coconut, stir well and close cook for another 3-4 mins! Job done! Easy-peasy!! 😉
You could have this as a side or just on its own with some flavoured rice 🙂
